Freezer-Friendly Sausage and Cheddar Scones

Perfect for quick, satisfying breakfasts on busy mornings, these savory scones are made to prep ahead, freeze, and reheat in just minutes.

Ingredients

  • 4 cups all-purpose flour

  • 2 tablespoons baking powder

  • 4 teaspoons granulated sugar

  • ½ teaspoon salt

  • ½ teaspoon ground red pepper

  • 6 tablespoons chilled butter, cut into small pieces

  • 1 ½ cups shredded sharp cheddar cheese

  • 1 ½ cups cooked ground sausage

  • 1 ½ cups low-fat buttermilk

  • 4 large egg whites


Step-by-Step Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a large mixing bowl, combine the flour, baking powder, sugar, salt, and ground red pepper. Work the chilled butter into the dry mixture until the entire blend resembles coarse crumbs.

  3. Stir in the shredded cheddar and cooked sausage until evenly distributed.

  4. In a separate small bowl, whisk the buttermilk and egg whites together until fully combined.

  5. Pour the wet ingredients into the dry mixture, stirring only until all ingredients are just moistened (do not overmix).

  6. Turn the dough out onto a lightly floured work surface. Knead gently 4 to 5 times with floured hands note: the dough will be sticky, this is normal for the recipe.

  7. Pat the dough into two 8-inch round disks, and place them on a baking sheet sprayed with nonstick cooking spray.

  8. Cut each disk into 8 wedges like a pie, cutting almost all the way through (stop just before cutting through the bottom of the dough).

  9. Bake for 20 minutes at 400°F, or until the tops of the scones are lightly golden brown.

  10. Let the scones cool completely to room temperature, then cut the wedges all the way through.

  11. Wrap each wedge individually, place all wrapped wedges in a zip-top freezer bag, and freeze for long-term storage.

Reheating From Frozen

Unwrap your frozen scone wedge and microwave for 30 to 50 seconds, until warmed through and ready to eat.

These scones were absolutely wonderful! I made a half batch last night for breakfast this morning, kept two out and stashed the rest in the freezer. They’re so flavorful and stay perfectly soft. I was nervous at first because the dough was incredibly sticky – most of it ended up on my hands! I skipped adding extra flour though, and they turned out great. Thank you for posting this recipe, I’ll definitely make it again!

I baked these for breakfast this morning and put the leftovers in the freezer to enjoy later. I took one reviewer’s tip and added a dried herb blend. I used a pound of low-fat sausage, cut the butter down to 4 tablespoons to account for all the cheese, and swapped thinned non-fat plain yogurt for the buttermilk. The scones turned out great, and the baking time was perfect.

These are really good, and so convenient to grab from the freezer for a breakfast on the run. This recipe is super versatile, and I plan to experiment with different add-ins the next time I make it.

Tish, these are fantastic! I used low-fat sausage and half whole-wheat flour, and both swaps worked perfectly. Next time I’ll add more turkey sausage and some herbs per my husband’s request. They heat up so easily straight from the freezer in the microwave, and I actually think they taste better reheated than fresh. I pack each wedge in its own small zip-top bag, then put all of those in a larger freezer bag. My husband is so happy to have a self-serve breakfast that isn’t cereal!
