  • 6 large eggs, beaten

  • 1⁄3 cup shredded Gruyère cheese (or 1/3 cup Swiss cheese, as a swap)

  • 1⁄4 cup water

  • 1⁄4 teaspoon fine sea salt

  • 1⁄8 teaspoon freshly ground black pepper

  • 2 tablespoons margarine or 2 tablespoons unsalted butter

  • 1 1⁄2 cups thinly sliced fresh mushrooms (≈4 oz)

  • 1⁄4 cup sliced green onion

  • 1 tablespoon snipped fresh flat-leaf Italian parsley

  • 1 tablespoon snipped fresh dill


Step-by-Step Instructions

  1. In a medium mixing bowl, beat together the eggs, shredded cheese, water, salt, and pepper until fully combined.

  2. Melt butter or margarine in a 10-inch nonstick skillet over medium-high heat. Add the sliced mushrooms and cook 4 to 5 minutes, until all excess liquid from the mushrooms evaporates. Stir in the green onion, parsley, and dill to coat evenly with the mushroom mixture.

  3. Pour the egg mixture over the cooked mushroom and herb blend. Cook uncovered over medium heat. Once the edges of the egg start to set, run a spatula around the edge of the skillet, lifting the set egg to allow uncooked egg from the top to flow underneath. Continue cooking and lifting the edges until the egg mixture is almost fully set (the top surface will remain slightly moist), then remove the skillet from heat.

  4. Cover the skillet and let the frittata rest 3 to 4 minutes, until the top is fully set. Slice into wedges and serve warm.
