Ingredients
1 (12-oz) can of crescent roll dough
1 lb cooked pork sausage, drained of excess grease
1 lb fresh mushrooms, sliced
¾ lb grated Monterey Jack cheese
6 large eggs, beaten
1 (10 ½-oz) can cream of onion soup
Step-by-Step Instructions
Unroll the crescent roll dough and press it evenly along the bottom of a 13x9-inch Pyrex baking dish.
Layer the drained cooked sausage, sliced mushrooms, and half of your grated cheese over the dough. This step is where you can add any extra custom mix-ins you’d like!
Mix the beaten eggs together with the cream of onion soup, then pour the mixture evenly over all the layers of your casserole.
Sprinkle the remaining half of the grated cheese over the top of the casserole.
Cover and chill the assembled casserole in the refrigerator overnight. The next day, bake at 350°F (175°C) for 1 hour, until fully set.

Reviews from home cooks who have tested this recipe:
Review 1: My local grocery store didn’t have cream of onion, so I swapped in cream of mushroom, cut the fresh mushrooms down to ½ pound, and added real bacon bits, diced cooked pork roll (Taylor Ham), and red bell pepper. It turned out terrific.
Review 2: I added diced ham, a mix of chopped green, yellow, and red bell peppers, plus shredded home fries, and used Egg Beaters instead of regular eggs (the Southwest and Cheese n Chive varieties are the BEST!). Everyone raves about this and always asks for the recipe—it’s quick, easy, and so delicious!
Review 3: This is very tasty! I increased the sausage to 1 ½ lbs of Jimmy Dean hot n spicy sausage, couldn’t find cream of onion so I also swapped in cream of mushroom, added sliced green onions in step 2, and topped with sliced tomatoes. As a mushroom lover, I found 1 lb of mushrooms to be excessive. Next time I’ll use 8 ounces, and I recommend that adjustment to anyone making this.
Review 4: I made this for Christmas morning 2010, prepped the night before. The store was out of crescent rolls, so I used biscuit dough instead and added 1 cup of bacon. It was a little drier than I hoped, but still good. I’ll add an extra can of soup next time.
Review 5: Great recipe! I used 7 eggs to use up my whole carton, swapped cream of onion for cream of mushroom since I couldn’t find it, and added steamed broccoli, extra onion, and a few roasted diced jalapeños. Absolute perfection.

Common Custom Tweaks
Other popular adjustments from the community:
Holiday morning prep hack: If crescent rolls are unavailable, biscuit dough works as a great swap. For extra heartiness, add 1 cup of crumbled bacon. If you prefer a moister casserole, add an extra can of soup.
Diet and availability swaps: When Monterey Jack isn’t available, sharp cheddar works perfectly. If you don’t like cooked mushrooms in casseroles, swap them for extra diced onion and top the finished bake with fresh sliced tomatoes for brightness. This makes such an easy, fuss-free cooked breakfast for busy mornings—it’s a wonderful family recipe!

I’m 30 years old, and I love cooking for my family of four. I’m married with two wonderful kids—they’re the ones in the main photo, even though it’s a little old now! Wesley turns five in June, and Katelyn turns eight in June. I’m always looking for new recipes to test on my family, and I also teach a class of 17 amazing 3-year-olds, so I prioritize quick, easy, great-tasting food that my whole family will enjoy. My husband is a picky meat-and-potatoes guy, so any new recipe he likes is a huge win. Wesley takes after his dad and loves meat and potatoes, but he’s also great about trying new foods, and Katelyn will eat anything she can get her hands on. Katelyn has special needs, so we have to be intentional about what she eats—you can follow her journey on her CaringBridge website here.
