5-Star Reader Review

I’ve been searching for a foolproof, delicious overnight breakfast recipe for ages, and this is it! This brunch pie cuts into perfect, clean wedges that hold their shape beautifully. At first bite, it reads like a creamy, savory quiche, but the hash brown base and crispy cornflake topping give this casserole a totally unique, standout flavor all its own.

When I was prepping to make this, I realized my Swiss cheese had gone past its prime, so I swapped it for mozzarella last minute—and it turned out to be an amazing substitution in a pinch. I also highly recommend putting a bottle of Tabasco on the brunch table so guests can add their preferred amount of heat.

I will absolutely make this again, and I know it’ll become a staple in my house. It works perfectly for casual family breakfasts and special occasion brunch gatherings with guests alike. This recipe is a total winner!! Thank you for sharing, KelBel! :)
